All, I don't know about you, but with class cancelled tonight, I'm running low on a few items - my potato MR in particular. So, for dinner tonight, I made the pumpkin muffins from the first week's handout.
Hooray! I'm posting the recipe below - has anyone else tried these? Super easy and fast, and extremely tasty.
Here's the recipe, with my adjustments (I added baking powder to help it rise some, made mini muffins and regular muffins, and adjusted the cooking time.
Pumpkin Muffins Servings: 6 Calories per serving: 170 calories
6 packets vanilla MR (960 cal) 2 tsp cinnamon (18 cal) 1 T vanilla extract (31 for imitation, 38 cal for pure) 1 tsp pumpkin pie spice (6 cal - 0 if you use extract) 1 tsp baking powder 8 oz water (0 cal)
Mix all ingredients together. Spoon into (mini) muffin tins). Should make 12 muffins. Bake at 350 degrees for 20 minutes for regular muffins, about 10 for mini muffins. NB: I would love to sprinkle some Splenda on top of these next time just for fun! NB: Serving size varies - 2 regular muffins, or 5-6 mini muffins, depending on how many you make.
