So the recipe I tried today was another from the PDFs I linked to earlier - Garlic Cheese Bites. My review:
They were fine. I dipped them in my olive oil which helped. I liked the occasional bites of melted cheese.
BUT - if I did my additive calculations right, there's an extra 300 calories for the two servings, which meant I just completely blew my entire calorie allotment for the day. Huh? So If I make this again, I would definitely cut down on the corn muffin mix, and maybe on the cheese too. I don't know what I'm going to do with that 2nd serving. Maybe I'll bring it tomorrow so y'all can try, but I doubt they're good cold.
I don't highly recommend, but if you've been craving cheese and want to experiment by cutting some of the additive calories, feel free!
Since I have 0 calories left for the day, I'm now off to make another batch of that garlic bread, which has no extra calories....
Mini Cheese Bites (2)
Meal Replacement: 160 calories
Additives:
Calories per serving:
2 potato MR
5 Tbsp corn muffin mix (I used Jiffy - 200 for 5 T?)
Dash of onion salt (try onion powder instead to cut salt)
Dash of garlic salt (try garlic powder instead to cut salt)
2 part-skim mozzarella cheese sticks (+ 100 sargento light string cheese (50 apiece))
Water
Set oven to 325 degrees. Spray mini-muffin tin with non-stick spray. Chop cheese sticks and set aside. Mix Potato MR and corn muffin mix together in a bowl; add cheese slices, onion and garlic powder, and water to make a thick, lumpy batter. Spoon into mini muffin tins. Put into oven for 15-18 muffins or until golden brown. Makes 1 dozen. **A twist from the mini corn dog bites!
