Potato Mushroom Deep Dish "Pizza"
Topping 1 1 to 2 cups fresh mushrooms (15 cal per cup) spices to taste (I use salt, 1/2 tsp dehydrated onion, garlic powder (10 cal/tsp), pinch paprika, ground mustard (16 cal/tsp)) Optional: 2 to 4 TB sliced black olives (15 cal/2 TB)
Spray small skillet with cooking spray. When hot, add mushrooms, spritz slightly with cooking spray, add spices and stir. Cook until mushroom start to become tender, stirring occasionally.
Base 2 or 3 Potato MR 1c. no-fat chicken broth (10 cal) pinch of Italian spice mix (optional)
Preheat oven to 350. Line 8x8 baking pan with foil or parchment paper. Spray lightly with cooking spray. While mushrooms are cooking, mix together base ingredients. Pour into prepared pan. Top with the mushroom mixture.
Topping 2 Over mushrooms mixture, cut cheese stick into thin slices (Weight Watchers cheese stick 50 cal/each). Optional: also sprinkle 2 to 4TBS sliced black olives over mushrooms Optional (if still have oil requirement to meet): drizzle 2 tsp olive olive oil over all
Bake 12 to 18 minutes until base is firm. Worth saving your daily calories for!
